The kids were Incredibly happy when they found out it was going to be Father’s Day. The Day before they were preparing for it. Trying to be sneaky with making cards and writing love notes to their Daddy. With giggles here and whispers of words like, “shhh, don’t show Daddy yet, it’s not time!” Scott and I were enjoying the moment. Our kids were so happy. They truly wanted to make it a special day and boy did they succeed!
Scott had the hard job of “sleeping in” while the kids and I scampered around the kitchen trying to make a nice and yummy breakfast surprise for him. We settled on making grilled french toast with fresh squished up and pulverized strawberries strawberry jam, bacon (Scott’s favorite), and scrambled eggs. They also served coffee and juice. I chose an easy and quick meal for the kids so they can make most of the meal by themselves. Here are some pictures of them making the meal.
I lined a baking sheet with aluminum and cooked a packet of bacon in the oven at 400 degrees for 20 minutes. 1/2 way through the cooking time flip the bacon. I love making bacon this way, a lot less messy and not as dangerous as cooking them on the stove top. Once it’s done transfer the bacon onto a platter lined with paper towel . When it has cooled enough, roll the bacon and place on the plate.
Recipe for Grilled French Toast
Ingredients
- 6 slices French bread
- 2 eggs
- 2/3 cup milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1 tablespoon butter
- 3 tsp honey
Directions
- Cut French bread about 1/2 inch thick. (We sliced 8 slices)
- Beat together eggs, milk, vanilla, cinnamon, and honey. Dip the bread slices into egg mixture.
- Heat butter over medium-high heat in a skillet. Cook bread until golden brown. Serve warm with the fresh strawberry syrup ( mush some strawberries then add in syrup and mix well).
- Make scrambled eggs to go with the meal. Add coffee and juice and there you have it, an oh so YUMMY meal!
The best part was seeing my kids so bubbly happy and clapping as their Daddy took the first mouthful and exclaimed, “The BEST breakfast I ever ate! Mmm Great job kids, it’s soooo yummy!”I asked the kids what their favorite part in making the meal was and their response was cracking eggs! “We did all the cooking and washed our hands a lot Daddy.” That made Scott smile.
It won’t be a Father’s Day weekend at our house if we didn’t do some kind of grilling, rain or shine…there WILL be grilled food to eat for dinner. We couldn’t decide between two main dishes so we made them both and here they are:
I have to admit, it was VERY YUM-DELISH!!! Especially when Scott cooks it just right. The drumsticks were finger licking good and the BBQ chicken breast was tangy, tender and juicy!
Grilled drumsticks Recipe:
- 2lbs (about 12 drumsticks) drumsticks
- 2/3 C 7Up soda (or any clear soda)
- 3Tbs All Natural Oyster Sauce
- 1 tsp garlic powder
- 1tsp brown sugar
- 1/2 tsp soy sauce
- 1/2 tsp teriyaki sauce
- 1/2 tsp black pepper
- salt to taste (I used 1/8 tsp )
Directions:
Cut a slit in the drumstick so it can absorb the marinade and set them in a bowl. Put all ingredients together in another bowl and mix well. Then dip the drumstick one at a time into the marinade coating it well and put them back into the drumstick bowl. After that pour the rest of the marinade into the drumstick bowl and marinade for at least 2 hrs. You can also put the marinaded drumsticks in a ziploc bag if your fridge is limited on space.
preheat oven to 375 degrees place drumsticks on a shallow baking pan (I used a baking stone pan from Pampered Chef) place drumsticks cut side up on the pan and cook for 40 minutes turning the legs half way through cooking. Then transfer drumsticks onto grill and cook until done.
*Note* My Mom taught me about using 7 up or any soda acts as a tenderizer for meats. You don’t have to use soda if you’re totally against it.
BBQ Chicken Recipe:
1 lb chicken breast
2/3 Cups Zesty Italian dressing
a pinch of salt
Any BBQ sauce of your choice (I used Kraft Original-slow simmered)
Directions:
Marinade chicken breast with Zesty Italian dressing for at least an hour. Place chicken on preheated grill. Close cover and cook for 5 min. Turn chicken over and baste first grilled side with your favorite BBQ sauce. Close lid and cook for another 5 min. Turn chicken again, baste second grilled side with BBQ. Repeat this process, then check the temperature of the middle of the thickest piece with a grilling thermometer. The temperature of the thickest piece should be at least 160 °F If it is close, you can start taking off the thinner pieces. Any that need to stay a little longer, keep basting and turning.
We had Farmer’s Market salad with the meal and it went perfectly together. For dessert we ate strawberry short cake with the fresh strawberry jam that the kids made earlier. It was a fun filled day with lots of yummy food and wonderful company. The kids were happy running around with their friends while we adults had after dinner drinks and played bean bag toss game until the golden sun set behind the bluffs.
